CHOCOLATE TRUFFLES

Ingredients:

1/2 Cup of VCO Organic Virgin Coconut Oil
1/4 Cup of honey
1/4 Cup of cocoa powder
1/2 Teaspoon of vanilla essence
Coatings:
Chocolate
2 Tablespoons of cocoa or
Coconut
1/2 Cup of Desiccated coconut

Method:

  1. In a small sauce pan, melt the coconut oil and honey together over a gentle heat. Whisk until both are combined. ( do not over heat)
  2. Turn stove off and sift the cocoa powder into the pan.. Whisk to into mixture until it thickens.
  3. Whisk the vanilla essence into the mixture.
  4. Pour mixture into a container and put into the fridge to cool.
  5. Once the mixture is firm, (approx 3o mins) take out of the fridge.
  6. Scoop a teaspoon of the truffle mixture and quickly roll into balls.  Try not to over handle the chocolate as it will melt and gets a bit messy.
  7. Place balls onto tray and roll up all of the rest of the mixture.  You can place the balls back into the fridge again to firm up for the final step.

Chocolate Truffle – Sift the cocoa powder onto a tray.  Place the balls on the tray and gently cover with the cocoa powder.
Coconut Truffle – Repeat the above but with desiccated coconut.
You can add nuts, seeds, or other coatings to mix up the texture and flavours.
Store truffles in an air tight container and in the fridge to stay firm.

Makes approximately 12 – 15 truffles (depending on how big you make the balls)
